These 10 minute creamy peanut noodles with chicken are so delicious 🀭. The key to this recipe is the peanut sauce, the flavor just hits & it's so simple. This recipe is great for a quick lunch or weekly meal prep. Watch the recipe reel here.

Ingredients for the peanut sauce:

  • 1/4 cup creamy peanut putter

  • 2 tbsp agave

  • 2 tbsp soy sauce

  • 1 tbsp sriracha

  • 1 tbsp rice vinegar

  • 1 tsp chili flakes or chili oil for extra spice

  • 1/4 tsp garlic powder

  • juice from 1/2 lime

  • **optional to add 2 tsp fish sauce

Other Ingredients:

  • 12 oz rice noodles

  • shredded chicken (use rotisserie to make this extra simple)

  • shredded carrots

  • green onion

  • cilantro

  • chopped peanuts

  • bean sprouts sesame seeds

Directions:

  • 1. Cook 12 oz rice noodles (follow cook time accordingly but usually 5-7 minutes)

  • 2. Whisk together all peanut sauce ingredients until it becomes a creamy consistency.

  • 3. Mix together noodles, chicken and sauce until fully covered

  • 4. Add toppings and enjoy!

  • Best served warmed. **for additional protein, you can add in egg and tofu
