Recipe: Chicken Vegetable Soup
Chicken vegetable soup for the soul. My mom made me this soup when I came home from the hospital after I had June and Parker. I swear it has healing powers. Pair with freshly toasted bread and enjoy!
Directions:
One half onion, chopped
One or two carrots, sliced
Saute in olive oil until a little bit soft
Add one sliced zucchini, half of a chopped Napa cabbage, and a handful of broccoli slaw
Add 2 quarts of chicken stock and one can of tomato paste
Put in some oregano or Italian seasoning
Bring to a boil and simmer until vegetables are cooked
Add green beans (about half a cup) and shredded rotisserie chicken at the end
You can switch out any of the vegetables, depending on what you have at home!
For the Crockpot:
I did two chicken breast, cooked on high 3-4 hours. Shred chicken breast and put back in before last half hour with green beans.
