Recipe: BELL PEPPER SOUP π«π₯£π«Άπ€π₯
Soup season is here and I have fully embraced it! I love stuffed bell peppers so decided to create a slow-cooker soup version. The slow cooker does all the work (and bonus your home will smell amazing!) Watch the recipe reel here.
Ingredients:
1 pound ground turkey (browned on stove before)
1/2 onion chopped
3 bell peppers (I used 1 red, 1 yellow, and 1 orange)
14oz can diced tomatoes
14 oz can tomato sauce
Broth of choice (I used chicken)
Savory seasoning to taste( I used oregano and Italian seasoning)
Garlic powder
Chili powder for an extra kick
Salt and pepper to taste
1-2 cups of Rice (cooked before putting in soup)
How To:
Put everything except for the rice in the crockpot.
Cook on low for 6-8 hours or high for 3-4 hours.
Mix rice in before serving or add rice to each individual bowl (this helps rice to not get mushy if you are saving it for meal prep).
Top with cheese and enjoy!
