Recipe: Hummus Crusted Salmon Bites
Our viral Hummus Crusted Salmon in bite version! This takes our OG recipe to a whole new deliciously crunchy level. Try it over a bed of arugula or a hearty coconut rice bowl. It will not disappoint, catch us making this on repeat.
Ingredients:
Salmon filets
Hummus
Panko bread crumbs
Grated Parmesan
Thyme
Dijon mustard
Garlic powder
Agave or honey
Olive oil
Salt and pepper
Lemon
Directions:
Cut your salmon into cubed pieces
Coat salmon cubes with hummus
In a separate bowl, mix together panko bread crumbs, agave (or honey), garlic powder, dijon mustard, parmesan, salt and pepper, and thyme.
Coat each cube of salmon with the panko mixture (we recommend pressing it into the salmon).
Put the salmon in the oven (or air fryer)
We served ours over a bed of arugula with lemon, parmesan, and cherry tomatoes.
