Recipe: Balsamic Salad
One of my favorite salads ever! My mom always used to make a version of this salad growing up, it’s perfect to display in a big bowl and serve at dinner parties! Great as a side dish or throw your favorite protein on top to make it the main course.
INGREDIENTS
Spring mix
Romaine
Bacon (cook ahead of time or use premade)
Dried cranberries
Granny smith apples
Sliced almonds
Red onion thinly sliced
Gorgonzola or blue cheese
For the dressing:
1/2 cup olive oil
Honey or agave
3-4 tbsp balsamic vinegar
Dijon mustard
Salt and pepper
HOW TO
Add spring mix and romaine to a large serving bowl, and mix it up (remember to wash your lettuce before).
In a separate bowl, mix your olive oil, balsamic vinegar, spoonful of dijon, then a little agave or honey for sweetness. Then, salt and pepper (I like a lot of pepper in mine). Whisk it up and set aside.
Add dried cranberries to the serving bowl.
Chop your bacon, and add.
Add slivered almonds (or nut of your choice).
Add thinly sliced red onion.
Chop you apples and add to the bowl (make sure to add them right before you serve so they don’t brown).
Add blue cheese or gorgonzola on top.
Drizzle your dressing over the top and ready to serve!
