Recipe: One Pot Creamy Chicken Pasta
Creamy chicken pasta all in one pan, with mushrooms and spinach! I didn’t actually use cream for this, so it is a healthified version- but still tastes SO good. Watch the recipe reel here.
Ingredients:
Olive oil
Sliced chicken breast
1 Onion chopped
Garlic minced
Mushrooms sliced (I use Baby Bella)
Spinach (I use almost a full bag because it wilts down so small)
3.5-4 Cups of chicken broth
Pasta (you want a 1:2 ratio of pasta to broth)
1/2 Cup parmesan cheese
Options for creaminess: reduced fat cream cheese, greek yogurt, milk, canned coconut milk
Salt and pepper
Directions:
Season chicken and cook on pan over medium high heat with olive oil until cooked through/ slightly brown. Should take about 6-8 minutes. Once cooked remove and set aside.
Add onions, mushrooms, and garlic to pan. Cook until tender and it should start to smell super yummy! Be sure to stir often, so the garlic doesn’t burn.
Add in chicken broth and bring to a boil
Ad the pasta and then down to a simmer for about 12-15 minutes, until pasta is cooked and most of the liquid is gone. Be sure to check in and stir a few times throughout this process. You can always add more liquid (water or broth) if needed.
Time to add the sauce! Stir in parmesan and creamy cheese or milk option - I did reduced fat cream cheese in this recipe
Fold in spinach
Add the chicken back in, give it some more salt and pepper, mix up and enjoy!
