Recipe: Shrimp Scampi (One of our FAVS!)
This is one of Jo’s absolute favorite recipes. It tastes like you’re at a five star Italian restaurant and we guarantee that you’ll impress all of your dinner guests or your s/o when it’s your turn to cook for date night. The best kept secret is that it takes less than 15 minutes to make, like it’s so quick you won’t even have time to finish your first glass of wine!
The key to this recipe is to have fresh ingredients, like the garlic and Parsley (rather than using spices/powders from the cabinet), it makes all the difference. The fresher the better.

Ingredients:
1 lb raw shrimp (de-veined). I like to buy mine fresh from Whole Foods.
Banza Pasta (Fettucine).
Olive Oil
Fresh Parsley
Fresh Garlic
Lemon
Chilli Flakes
Parmesan
S&P
Directions:
Finely chop up fresh garlic and fresh parsley and leave on cutting board.
Bring water to a boil in large pot. Add in desired amount of pasta. I like to use Banza chickpea pasta for added protein and I’ve found that it soaks up the flavor more than regular pasta does. I use the entire box since I like to eat this for leftovers throughout the week too.
In a large sauce pan, heat 2 tbsp olive oil. Once heated, throw in shrimp and cook for about 5 minutes, until they start to change color.
Juice 1 lemon (get this lemon squeezer if you don’t already have one) directly into shrimp pan. Add in garlic, parsley and red pepper flakes. Turn to simmer, cover and let sit for 5 minutes.
Once pasta is done, drain and add directly into the shrimp pan.
Add in 1/4 cup olive oil (I usually just eye ball this so you can do more or less), S&P and fresh parmesan. Mix together.
