Recipe: Italian Summer Pasta Salad
This recipe is perfect for a work lunch or potluck (or anytime tbh), because it is so easy to make! It takes 20 minutes to make and tastes great after storing in the fridge. If you want to give it more of a Greek flare, switch the mozzarella for feta!
INGREDIENTS
Pasta of your choice (I used bow tie)
English cucumber (thinly sliced)
Thinly sliced red onion
Cherry tomatotes (halved)
Mini mozzarella balls - sliced in half or quarters (you could also use feta if you want it to be a little more greek)
Pitted kalamata olives (halved) - you can use black olives if you want Iβm just a kalamata girly
Chopped fresh parsley
Optional: thinly sliced salami
For the dressing:
1/2 cup olive oil
1/4 cup red wine vinegar
Minced garlic
Salt and pepper
Dash of honey or agave
Dried Italian seasoning
HOW TO
Cook your pasta, and set aside to cool
Chop up all of your ingredients
Once the pasta is cool, add the mix-in ingredients and stir
Add your dressing, stir once more
