Recipe: BBQ Chicken Chopped Salad
This BBQ chicken chopped salad is inspired by my childhood spent at CPK. The perfect recipe to start incorporating chicken back into my diet after 5 years (woah). It’s filling and packed with protein. Don’t tell CPK but... I think mine is better.
Ingredients:
lettuce
black beans
roma tomatoes
avocado
jicama
green onion
Fresh cilantro
Fresh basil
tortilla strips
Monterey jack cheese
BBQ sauce (I use primal kitchen)
ranch dressing (I use primal kitchen)
Directions:
1. For the chicken, cook on the stove with olive oil (5-7 mins on each side). Place in the fridge and let cool. Once cool, cut into small cubes and mix in BBQ sauce.
2. Chop your veggies and assemble salad. Make sure that all ingredients are chopped finely so you get a little taste of everything in each bite! I recommend adding in ranch dressing and mixing all together before adding chicken.
3. Add your BBQ chicken and tortilla strips. Enjoy!
