Recipe: Chocolate Chip Zucchini Muffins
Entry level recipe, advanced level deliciousness. Used my favorite Hukitchen chocolate chips which are made with only 4 ingredients and zero sugar alcohols. Use code SWEATANDTELL for 20% off site wide.
Ingredients:
1/2 Cup of Hukitchen chocolate chips (and handful more to sprinkle on top)
1 Grated zucchini
1 Teaspoon salt
1/2 Teaspoon baking soda
1/4 Teaspoon baking powder
1 teaspoon ground cinnamon
1 Cup sugar (or sugar substitute)
Dash of nutmeg
Dash of ginger
1 & 1/2 Cups flour
1 Teaspoon vanilla extract
2 Large eggs
1/2 Cup avocado oil
Optional: protein powder
Directions:
Preheat the oven to 350 (rack in middle)
Coat muffin liners with avocado oil spray (or non-stick of choice)
In one bowl: Mix together zucchini, oil, eggs, and vanilla extract. Then mix sugar into the mixture.
In a separate bowl: mix all other dry ingredients together
Add dry mixture to wet ingredients and stir until combined.
Mix in chocolate chips
Pour the batter into the muffin liners (fill almost to the top of each)
Sprinkle extra chocolate chips on top
Bake for 20 minutes
Let cool for at least 10 minutes before enjoying!
