Recipe: Salmon Stir Fry Bowls (Meal Prep!)
These Salmon Stir Fry Bowls are so quick and easy! The perfect meal to cook after a long day of smiling and nodding on Zoom calls. I cooked this for my boyfriend and I on a Monday night and we chipped away at the leftovers for days! Talk about easy meal prep.
This step is not required but I suggest you listen to “Stir Fry” by Migos while you cook. Makes it taste better somehow.
Ingredients:
Rice or rice substitute (I used Right Rice for this recipe)
1 Green Pepper
1 Red Pepper
3 Cups Broccoli
2 Large Whole Carrots
1 Yellow Onion
2 lbs Fresh Salmon
Trader Joe’s Tropical Soyaki
Salt & pepper to taste
Directions:
For the Salmon
Preheat oven to 375
Place salmon filet on a pan with aluminum foil. Top with olive oil, salt, pepper, onion powder and Soyaki sauce (optional if you want a lot of flavor!). Bring edges of the foil together to fully encase the salmon.
Place in oven for 20-25 minutes.
For the Vegetables
Chop up vegetables - peppers and onions into squares, and the whole carrots into 1/8 inch thick round slices
Heat 1 Tbsp olive oil in pan (or wok if you have one) . Once hot, add vegetables and 1/4 cup water. Cover and leave on low to medium heat for 10 minutes, occasionally stirring.
Remove lid once vegetables are thoroughly cooked. Add salt and pepper.
For the Rice
Cook as directed on package. I used Right Rice!
To Serve
Scoop desired amount of rice onto plate. Top with a healthy scoop of vegetables and a piece of the salmon filet. Drizzle with Soyaki. (Optional: sriracha for a kick, and avocado for healthy fats!)
Put the leftovers in tupperware and you can eat for lunch and dinner the rest of the week. Enjoy!
