Recipe: Southwest Salad with Blackened Salmon
Welcome to part 1 of our Salads that Don’t Suck series! This Southwest Salad with Blackened Salmon Bites and Chile Lime Vinaigrette is nourishing, full of protein, and easy to make if you’re hosting, or just need a new meal on your weekly rotation. This is for a serving size of 2.
HOW TO:
For the salmon: Cut salmon into cubes and toss with olive oil and seasoning (seasoning ingredients below). Cook in the air fryer at 350 degrees for 10-12 minutes or until crispy.
1 tbsp paprika
1 tbsp chili powder
1 tbsp onion powder
1 tsp garlic powder
1 tsp oregano
Salt + pepper
For the chili lime dressing: Whisk together the following ingredients:
3 tbsp olive oil
1 tsp chili powder (I like the Chili Lime from TJ’s)
1 tsp garlic
2 tsp agave
Juice from 1 lime
Salt + pepper
Assemble your salad:
Lettuce
Tomatos
Corn (fresh off the cob!)
Black beans
Avocado
Green onion
Cilantro
Feta or cotija chese
