Recipe: Maple Baked Sweet Potatoes

This is the easiest last minute festive recipe for Friendsgiving, Thanksgiving or your office potluck this season. Not to brag but… this was voted the best dish at the last Friendsgiving I went to so safe to say it is a crowd pleaser.

This recipe takes 35-40 minutes max including cook time.

Ingredients:

  • 4 Large Sweet Potatoes

  • Maple Syrup

  • Avocado Oil

  • Coconut Oil

  • Brown Sugar

  • Cinnamon

  • Pecans

Directions:

  1. Preheat oven to 400

  2. Cut 4 large sweet potatoes into small cubes

  3. Make maple glaze by mixing together 1/4 cup maple syrup, 1/4 cup avocado oil, cinnamon and 1/4 cup brown sugar (I like Whole Earth Sweetener brown sugar but totally up to you!)

  4. Pour glaze over sweet potatoes and mix.

  5. Bake on 400 for 30 minutes. Optional to broil for 2-3 minutes if you want a little golden brown.

  6. While the potatoes are cooking, make the candied pecans. Start by heating up 2 tbsp coconut oil on the stove.

  7. Once coconut oil is melted, start adding in brown sugar until desired sweetness. I use about 1/4 cup of brown sugar to start and then will slowly add more if needed.

  8. Mix in 1 cup pecans and let simmer for 5 mins on low/medium. Mix frequently to avoid burning.

  9. Pour pecans onto parchment paper and lightly sprinkle with brown sugar so there is a coating. Let cool.

  10. Once potatoes are finished cooking, mix in the candied pecans.

I recommend making this day of your event so the sweet potatoes have a nice, clear glaze on them. However, you can easily reheat this dish in the microwave or oven the next day for leftovers.
