Recipe: Baked Berry Oat Bars
These baked berry oat bars are the easiest grab and go breakfast or snack! They taste just as good reheated which makes for perfect meal prepping. I make them less sweet since I like to top with honey and nut butters, but you can double the sugar or agave if you prefer a lil something sweeter.
HOW TO:
Step 1: Mix together dry ingredients:
1 1/2 cup oats
1 tsp baking powder
1/2 tsp ground cinnamon
1 tsp Stevia
Step 2: Mix together wet ingredients
2 eggs
1 banana
1/2 cup almond milk
1 tsp vanilla extract
2 tsp agave
Step 3: Combine dry + wet ingredients and then mix in blueberries and raspberries
Step 4: Pour into a 9x9 baking pan (I recommend greasing with coconut oil). It will be a thin layer so make sure the oats are evenly spread out. Top with additional blueberries.
Step 5: Bake at 350 degrees for 24-26 minutes, or until the edges are golden brown.
Step 6: Top off with honey, almond butter, or greek yogurt!
