Recipe: Chewy Bar Balls

Take one bite of these snack balls and you will be transported right back to basketball practice in the early 2000’s, scarfing down one or two chocolate chip Chewy bars and a gatorade! Butterfly clips and Motorola Razr not included.

But seriously, you guys are going to freak when you take a bite out of these. They have this texture that is to die for, like a magical mix of soft and chewy yet a bit of crunch.

They’re easy to make and the perfect breakfast or snack. I love these before early morning workouts or in between work meetings while I’m WFH!

What You’ll Need:

  • 1/2 cup oats

  • 1/2 cup raw almonds (I use Blue Diamond Almond Breeze)

  • 2 Tbsp Almond Milk or other milk alternative

  • 1 tbsp Agave

  • Splash of Vanilla Extract

  • 1/4 cup semi sweet chocolate chips (I use Lily’s)

  • 3 large pitted medjool dates (I use Joolie’s from Whole Foods)

Directions:

  1. Preheat oven to 350 degrees. Place almonds onto baking sheet and roast them for 10 minutes. Remove from oven and let cool for 5 mins.

  2. Using a food processor or blender, finely chop the whole almonds until crumbly. They should be a finely chopped nut texture but not a powder. See first photo below for reference.

  3. Add in oats and continue to chop until they are mixed in with the almonds.

  4. Add in chocolate chips and dates. I recommend cutting up the dates into slightly smaller pieces just to ensure that they are evenly dispersed (depending on how powerful your food processor or blender is).

  5. Process or blend until ingredients begin to densely clump together.

  6. Mix in almond milk, agave, and vanilla. Process or blend again until ingredients the mix has a thick consistency. See fifth photo below for reference.

  7. Form mixture into 8-10 balls. Store in refrigerator for up 2 weeks- but they’ll be gone faster than that! ;)
