Recipe: Blackened Salmon Bowl with Mango Salsa + Coconut Jasmine Rice
The perfect summertime meal!
For the mango salsa:
Chop + Mix together:
1 Mango
1/2 Cup tomatoes
1/2 Red onion
1/2 Red pepper
1 Habanero pepper
1 Avocado
Cilantro
1 Lime
Agave
For the salmon bites
Cut salmon into cubes and toss in olive oil and seasoning (I use premade blackened seasoning because Iβm lazy)
Air fry at 375 for 12 minutes
For the coconut rice:
Bring coconut milk and jasmine rice to a boil then turn down to simmer, cover and let cook for 15-20 minutes
Add in cilantro
